Cream of Asparagus Soup

Creamy Asparagus SoupYes, more soup. It’s great for what ails you on those cold winter days. Cream of asparagus soup is made rich with good chicken stock, milk and cream, a little butter, some Gruyere cheese, and of course FRESH

asparagus. I know, many of you don’t like asparagus. If you’re basing your dislike of asparagus on tha

t stuff in a can…well no wonder you think you don’t like asparagus. I dare you to try fresh asparagus, you may just change your opinion. The taste is totally different.  So be brave..try something new.

This soup only takes about 30 minutes to prepare and serves 4-6.

Cream of Asparagus Soup

Ingredients:fresh asparagus

  • 2 lb fresh asparagus
  • 2 cloves garlic
  • 1 large shallot or 1/2 cup of onions
  • 1 teaspoon dried thyme or use fresh if you have it.
  • 4 cups chicken broth
  • 1 cup milk or 1 cup cream or half and half
  • 1 cup shredded Gruyere cheese. Do not use a smoked cheese. (OK to use shredded cheddar)
  • 1 lime
  • salt and black pepper
  • pepper flakes or cayenne pepper (which ever you prefer for a little spark)
  • Sour cream (at least a cup, however, if you used milk instead of cream or half and half, you may want to add a whole pint (2 cups). Yes, using light sour cream works just fine.

Directions:

RinsTrimmed Asparaguse asparagus and trim ends off and discard; cut the rest into 1 inch pieces. Save some of the tops for adding at the very end.

Chop shallot/onion and garlic

Heat olive oil or butter in a large pot. I use a combo of both.

Add onions, garlic and asparagus to the oil/butter. A pinch of salt and pepper. Saute until onions begin to get soft.

Add saute asparaguschicken broth, thyme, and juice of one lime and simmer until asparagus is completely tender.

Add milk or cream.  Stir and let heat through. To reduce fat content, just don’t add cream or milk. Increase the chicken broth by 1 cup.

Add the cheese a little bit at a time. Let each addition melt fully before adding the next bit. Make sure the cheese is fully melted before the next step.

Now, it’s time to blend. If you have a stick blender, use it to blend the soup until smooth. You can use a food processor or blender. If you do, let the soup cool a bit before you blend. Put it back into the pot and turn heat to low.’

If you used milk or cream, add 1 cup of sour cream. If you left out the milk or cream to cut a few calories, add a full pint of light sour cream. Add the tops of the asparagus. Let heat on very low until the soup is hot again. Stir

Ready to serve.  Add a dollop of sour cream to the top. Sprinkle with a little lime zest.  Creamy Asparagus Soup
